Achiote-Rubbed Pork Chops

Ingredientes

  • 4 chuletas de cerdo de lomo superior de corte fino, con hueso
  • frotar con achiote

Ingredientes para frotar con achiote:

  • ¼ taza de aceite de oliva
  • 2 cucharadas de vinagre de Jerez
  • 1 cucharada de achiote en polvo (consigue el polvo, no las semillas)
  • 1 cucharadita de sal gruesa
  • ¼ cucharadita de ajo granulado o ajo en polvo
  • ¼ cucharadita de cebolla en polvo
  • Una pizca de pimienta negra recién molida

Instrucciones

  1. Seque las chuletas de cerdo por ambos lados.
  2. Recorta el exceso de grasa.
  3. Combine los ingredientes para la mezcla de achiote en una bolsa de plástico con cierre hermético de 3.7 litros.
  4. Sella la bolsa y mezcla todo hasta formar una pasta.
  5. Vuelve a abrir la bolsa y coloca las chuletas dentro.
  6. Sellarlo.
  7. Mueva las chuletas dentro de la bolsa para cubrirlas por completo.
  8. Calienta tu Sartén de 21 cm a fuego medio.
  9. La sartén estará lista cuando las gotas de agua bailen en la superficie de la sartén.
  10. Transfiera las chuletas de cerdo de la bolsa de plástico a la sartén seca con unas pinzas.
  11. Asegúrese de permitir que el exceso de frote vuelva a gotear dentro de la bolsa. Quieres lo suficiente en la chuleta para cubrirla.
  12. Cocine las chuletas de cerdo de cada lado durante cuatro minutos o hasta que la temperatura interna alcance los 65°C.
  13. Transfiera las chuletas a una fuente para servir.

Achiote is also known as annatto. It’s widely used for adding color to cheeses. It will add a sweet, peppery flavor to the pork. It’s easy to find in the Latin foods aisle of your grocery store. Be sure to wear gloves if you’re going to handle the rub mixture. It won’t hurt you but will color your skin for a couple of days. An easy solution is to pour the rub ingredients into a one-gallon sealable plastic bag. Mix everything then add the pork chops. Seal the bag and move the chops around in the rub. Transfer the chops with tongs from the bag to the pan.

Achiote-Rubbed Pork Chops

Ingredients

  • 4 Thin-cut top loin pork chops, bone-in

  • Achiote rub

  • ¼ cup olive oil

  • 2 Tablespoons Sherry Vinegar

  • 1 Tablespoon Achiote (Annatto) powder (Get the powder not the seeds)

  • 1 teaspoon coarse salt

  • ¼ teaspoon garlic granules or garlic powder

  • ¼ teaspoon onion powder

  • A pinch of freshly ground black pepper

Directions

  1. Pat dry the pork chops on both sides.

  2. Trim any excess fat.

  3. Combine the ingredients for the Achiote rub in a 1-gallon sealable plastic bag.

  4. Seal the bag and mix everything to form a paste.

  5. Re-open the bag and place the chops inside.

  6. Seal it.

  7. Move the chops around in the bag to coat completely.

  8. Heat your 8.5" Fry Pan over medium heat.

  9. The pan will be ready when water droplets dance on the surface of the pan.

  10. Transfer the pork chops from the plastic bag to the dry fry pan using tongs.

  11. Be sure to allow any excess rub to drip back into the bag. You want just enough on the chop to coat it.

  12. Cook the pork chops on each side for four minutes or until the internal temperature reaches 150 degrees Fahrenheit.

  13. Transfer the chops to a serving platter.
