Ingredientes

Ingredientes de la marinada

  • 1 taza de aceite vegetal
  • ½ taza de vinagre de manzana
  • 6 dientes de ajo
  • 2-Cucharadas de sal gruesa
  • 2 cucharadas de mezcla de especias
  • 1 cucharada de salsa inglesa
  • Jugo de una lima

Mezcla de especias

  • 2-Cucharadas de granos de pimienta negra
  • 2-Cucharadas de orégano seco
  • 1 cucharadita de pimienta de Jamaica entera

Instrucciones

Preparando la carne

  1. Limpiar y secar la paleta de cerdo.
  2. Marque la piel en forma de rayado.
  3. Dejar de lado.

Escabeche

  1. Muele los 3 ingredientes de la mezcla de especias en un molinillo de especias. Necesitarás 2 cucharadas de esta mezcla de especias para la marinada. Guarde el resto en un recipiente hermético hasta por 1 año.
  2. Pulse el ajo, la sal, 2 cucharadas de la mezcla de especias, la salsa inglesa y el jugo de limón en un tazón de procesador de alimentos equipado con el accesorio de cuchilla.
  3. Agrega el vinagre de sidra de manzana al bol.
  4. Encienda el procesador y rocíe con el aceite vegetal para formar una emulsión.
  5. Coloque la paleta de cerdo en una bolsa de plástico con cierre hermético de 9 litros.
  6. Vierta la mezcla de marinada en la bolsa sobre la carne.
  7. Sellar la bolsa eliminando la mayor cantidad de aire posible.
  8. Coloque la bolsa en una bandeja para hornear y mueva la marinada para cubrir completamente la carne.
  9. Coloca todo bajo refrigeración.
  10. Durante el día siguiente, voltee la paleta de cerdo varias veces para redistribuir la marinada.
  11. Mantenga la carne en refrigeración durante al menos 24 horas y hasta tres días.

Cuando esté listo para comenzar el proceso de cocción.

  1. Saca la paleta de cerdo del refrigerador y déjala reposar a temperatura ambiente durante 30 minutos.
  2. Corta una cebolla grande (blanca o amarilla) en aros finos.
  3. Coloque la cebolla rebanada en su Olla de 7.5 litross.
  4. Vierta ½ taza de agua sobre las cebollas.
  5. Retire la paleta de cerdo de la bolsa de plástico.
  6. Deseche el exceso de marinada.
  7. Coloque la paleta de cerdo encima de las cebollas.
  8. Tapa la olla y colócala a fuego medio.
  9. Cocine hasta que el vapor comience a escapar por debajo de la tapa.
  10. Gire la tapa para activar el sello de vapor.
  11. Reduzca inmediatamente el fuego a bajo.
  12. Cocine la paleta de cerdo durante 3 ½ horas.
  13. Revisa la cantidad de caldo en la olla después de tres horas. Debe quedar abundante líquido, si no, agrega otra ½ taza de agua y vuelve a tapar. Si agrega líquido, aumente el fuego a medio hasta que el vapor comience a escapar por debajo de la tapa.
  14. Gire la tapa para activar el sello de vapor y reduzca el fuego a bajo.
  15. Retira la olla del fuego y déjala reposar tapada durante ½ hora.
  16. Destape la olla y transfiera con cuidado la carne a una Hoja de galletas grande.
  17. Vierta el caldo en un recipiente aparte. (No lo tires. Tiene mucho sabor).
  18. Separe la carne del hueso una vez que esté lo suficientemente fría como para manipularla.
  19. “Tire” de la carne de cerdo para separar las hebras de carne entre sí.
  20. Continúe esto hasta que haya pasado por toda la carne.
  21. Deseche el exceso de grasa y hueso.
  22. Enfríe tanto la carne como el caldo o use un poco de inmediato.

Here’s a recipe for easy and delicious pulled pork that takes only a few hours to cook. Marinate the pork for at least 24 hours but 2-3 days yields even better results.     • 1-cup of vegetable oil

    • ½ cup of apple cider vinegar

    • 6-cloves of garlic

    • 2-Tablespoons of coarse salt

    • 2-Tablespoons of the Spice Mix

    • 1-Tablespoon Worcestershire sauce

    • Juice from one lime

    • 2-Tablespoons of black peppercorns

    • 2-Tablespoons of dried oregano

    • 1-teaspoon whole Allspice

    Directions

      1. Clean and pat dry the pork shoulder.

      2. Score the skin in a crosshatch fashion.

      3. Set aside.

      1. Grind the 3 ingredients for the Spice Mix in a spice grinder. You will need 2 tablespoons of this spice mix for the marinade. Store the rest in an airtight container for up to 1 year.

      2. Pulse the garlic, salt, 2 Tablespoons of the Spice Mix, Worcestershire sauce, and lime juice in a food processor bowl fitted with the blade attachment.

      3. Add the apple cider vinegar to the bowl.

      4. Turn the processor on and drizzle in the vegetable oil to form an emulsion.

      5. Place the pork shoulder in a 2-gallon re-sealable plastic bag.

      6. Pour the marinade mix into the bag over the meat.

      7. Seal the bag removing as much air as possible.

      8. Place the bag on a baking sheet and move the marinade around to entirely coat the meat.

      9. Place everything under refrigeration.

      10. During the next day or so turn the pork shoulder a few times to redistribute the marinade.

      11. Keep the meat under refrigeration for at least 24 hours and up to three days.

      1. Remove the pork shoulder from the refrigerator and allow it to rest at room temperature for 30 minutes.

      2. Slice one large onion (white or yellow) into thin rings.

      3. Place the sliced onion in your 8 Quart Stockpot.

      4. Pour ½ cup of water over the onions.

      5. Remove the pork shoulder from the plastic bag.

      6. Discard the excess marinade.

      7. Place the pork shoulder on top of the onions.

      8. Cover the pot and place it over medium heat.

      9. Cook until steam just begins to escape from under the lid.

      10. Spin the lid to engage the Vapor Seal.

      11. Immediately reduce the heat to low.

      12. Cook the pork shoulder for 3 ½ hours.

      13. Check the amount of broth in the pot after three hours. There should be plenty of liquid, if not, add another ½ cup of water and replace the lid. If liquid is added, increase the heat to medium until steam begins to escape from under the lid.

      14. Spin the lid to engage the Vapor Seal and reduce heat to low.

      15. Remove the pot from the heat and allow it to rest covered for ½ an hour.

      16. Uncover the pot and carefully transfer the meat to a Large Cookie Sheet.

      17. Pour the broth into a separate container. (Don’t throw it out. There’s lots of flavor in it.)

      18. Separate the meat from the bone once it becomes just cool enough to handle.

      19. “Pull” the pork to separate the strands of meat from one another.

      20. Continue this until you’ve gone through all the meat.

      21. Discard the excess fat and bone.

      22. Cool both the meat and the broth or use some right away.
